Anyway i want to catch latias (i have sapphire) if you see latias once and she flees, will you still be able to find her again or what? I didnt want to save my game and not be able to ever catch her ever again. Thank you a bunch!!!!

You can see latias again. that happened to me too in emerald latios always fled but caught it with ultra ball. try using wobbuffet and it wont flee and bring lot of timer or ultra balls.to track where latias is use the pokedex. hope i helped.
